As of October 2016 we have (in no particular order):

________________________

What it has:

Game is still in early access but the devs do make regular progress, and they're very good about listening to the player base. Can pre-purchase and play right now. In both Solo and Multiplayer the worlds are saved and you usually have to wait a long time for a massive update before they delete everything.
As of the last major update the game is One Universe which means every player can meet up someplace so long as its not their personal homeworld. They can build structures and gadgets and vehicles and are able to share all of their stuff if they are on the same team. Enemy teams can attack each other, break down shields & walls, and loot goodies.
The home world is quite beautiful after the last big graphics update. The other planets and moons look pretty good but still need some work.
Theres a great deal of equipment to discover and build, several vehicles, and many different room types. Also a variety of crafting stations, and some defensive & offensive structures. There are several professions available and you dont incur any pentaly from jumping between them. All of their passive & active skills are kept when you change classes. The only downside to the game is theres a fair amount of grinding for resources, and you need to discover blueprints to do anything. All equipment and all buildable structures & stations need a blueprint. All of the professions except the starting one (Astronaut) require a blueprint. Some of them can be researched at a station, but the majority are gained from killing monsters. They come frequently though, and as long as you are at the correct level you will eventually get them.
There used to be a long grind for XP but that has been greatly alleviated by adding XP to resourcing, so now its possible to do a great deal without killing any enemies at all.

You dont need a special item to craft anything. So long as you have the blueprint and the needed resources, you're fine. The multitool is for harvesting and repair, and repair really only matters in MP when people attack each other.

At higher levels you can summon monster mobs of your choosing. Theres a variety of planet and moon types to explore. The vehicles are fun, especially in multiplayer, theres enough caves to keep you exploring for a while, probably until the game is officially released.

What is has not:

While the game has alien towers and giant spheres to explore, there is not much in them right now. You'll have to wait for an update for those things. The devs are working hard but its an independant project and at the rate they're going, we probably still have a year left for completion. Most of the updates are to fix a bunch of bugs and ocassionally add one new feature at a time.

There is no customizing of your character except for gender, and that only changes your size by a small amount, nothing else.
While the new Unreal engine looks gorgeous you have very little control over graphics options. Many people with mid-range systems are still getting poor performance, although the last few updates have helped a great deal.
No control over audio settings yet.
Right now there are no official quests. The in game tutorial will give noobs plenty to do, but after you collect everything useful and make a nice home base, you will get bored. MP is where most of the excitement is.
No map but there are beacons and locators on the compass and also LAT, LONG coordinates. No way to take notes in game so you will probably need a notepad handy, or be prepared to drop lots of beacons and sign posts all over the place. You can also build teleporters but they require power on both ends.

Lots of fun stuff to do, a nice big world to explore, and looks awesome too. You can build very sweet underwater habitats and quite a few vehicles, including a medium sized submarine that can hold a minisub and exoskeleton.
Still in early access, much work to be done, small developer so it may be a while. Plenty of goodies to farm and several dangerous fish to kill.

Game looks good but there isnt much to do yet, nor anything interesting to explore.

Game originally promised all kinds of cool stuff but eventually fell short. Its officially released however there just isnt much to do in it. Looks like the devs also had a habit of banning critics and ignoring the gamers. Shame.

Happens to be on sale for 5 dollars until October 25th. Thats about all its worth right now.

Still early access. Very realistic compared to other games, also very brutal. Doesnt have much content but they are working hard to add features. Lovely graphic style, plenty to explore but very little to craft. On each map you pretty much do the same thing: Find the one good place to make camp, forge for resources as you are able, survive as long as possible to get a high score. You will always die, eventually.

One day they plan to have proper campaigns and stories, but that could be a while. Progress is slow and steady.

= The Solus Project =

On Steam.

A lot more exploring and not nearly as much crafting, but the gameplay is excellent. Good story about a marooned scientist, trying to pick of the pieces of his fellow astronauts. Not only does he have to brave elements, traps, and (eventually) hostile creatures, he's also got to figure out the mystery of an ancient civilization.
Excellent graphics, frightening sound, and a very streamlined UI. Good all around.
Still in Beta, I think, but theres a lot of stuff to do already.

I haven't played The Long Dark in close to a year, but it had a fair amount of content back then, and I know they've added a ton of stuff since then - probably back on version .2xx.
They're now up to .365 and have added quite a bit.

You need to add:

7 Days to Day
Empyrion: Galactic Survival
Planet Explorers
Rising World
The Forest
Stranded Deep
Salt
Novus Inceptio
The Isle
Savage Lands
Judgment: Apocalypse Survival Simulation
Brutal Nature
(free while in development - http://www.brutalnature.com/download)

Just a few I've had an eye on that come to mind, probably missing some too :)
Most are EA, but still available.

Damn, OK. I'll spend tonight researching and will update my post sometime tomorrow. Probably between classes. Or after class if I actually have some real homework this week.

Common theme seems to be that almost all are early access games...have any of the major ones been finished yet?

BUMP!

Update after a year. Sorry for ignoring you guys.

GRAV is practically dead. No one will admit it officially, but they have definitely stopped working on the game. Sadly they are still selling it at Steam and I assume the devs are collecting the money for it. But they havent updating anything in an extremely long time.

Subnautica on the other hand has improved by leaps and bounds. It was originally supposed to be released on Halloween but they pushed it back to New Years day. They are making great progress though, adding features and fixing bugs. Its getting regular work and will be ready to go some day.

Osiris New Dawn was looking stagnant for a bit. However they have done some major patches over the summer and are also making progress. Lots of new features and fixes on a regular basis. Release date keeps shifting but at least they are doing things. Keep an eye open.

ARK as we all know finally got released. Lackluster reviews citing serious problems with the servers and a lack of features which had been promised during the Alpha and Beta stages.

Reign of Kings is the same as before. It was released with only a small fraction of promised features. They have not adding anything new in the last year.

The Long Dark was finally released and has an excellent campaign as well as new features and a clean, low-bug experience. Check it out.

The Solus Project got some patches, but they just added VR support or improved it.
The base game is still what it was at launch. But its a nice little experience for anyone who wants something complete but short.

BUMP!

Osiris New Dawn got a huge update. Nothing for the graphics, its all gameplay stuff.

A whole new planet and resources and monsters.
Lots of new toys, including attachments to the space suit (something expected for years and continually delayed).
New base items like furniture, stations, and defenses.
Running around UI is exactly the same but menu UI is completely revamped. Takes a little getting used to but I like it.
BUNCH of bug fixes. A few new features like building while still inside a vehicle.
No new vehicles, but some new features for the old ones.

Surprised you didn't mention 7 Days To Die got a pretty big update recently. It's still basically the same game we played in 2014, but it's not too bad to play if you have a group to play with on an active server. Maybe by 2027 they will release a final version, but I'm not holding my breath for that.

ARK is an amazing game, but I do hear that playing on the official servers is a veritable lag-fest. If you enjoy solo survival experiences, with gorgeous visuals, (sometimes very) challenging gameplay, a nice sense of progression, an excellent sense of exploration, and a robust modding community, ARK is definitely worth checking out. I avoided it for a long time because "dinosaurs don't really interest me" - turns out that it's so much more than that, and you don't need to be a dinosaur fan in the slightest to enjoy the game.

It's on sale now on Steam too, so it'd be a great time to pick it up. I've played 850+ hours so far in the game, the vast majority of that being solo/single-player, and I'm still very much enjoying it, particularly the latest DLC/map Abberation.

Life is Feudal:MMO

still has a lot of issues with servers but the amount of stuff you can do in the game is nice, we built our first castle/fort in a rather bad spot but thought we could overcome it with a lot of teraforming so we subjucated all the other small clans on our server. So we get attacked and our horrible fort design gets the better of us (never build a fort on the side of a mountain that can be terra formed, on top yes, but not the side) . So we decided to pack up everything and begin the great migration south into the empty barrens, and after a lot of teraforming we have a new more defensible position and are currently evicting all the smaller clans on our server.

Each square is it's own server but it looks like they have almost fixed crossing server boundries, each area has region special resources that need to be traded/mined/harvested in order to build the higher tier buildings

Of Kings and Men, development has stopped, game sales halted. New publisher says it's not feasible to continue development.
Never bought it but it's been on my watch list. Looked like a cooler version of Mount & Blade
