The Last Minute Recipe Thread!

I have become obcessed with making my own cranberry sauce. It is easy, simple and tastes SO much better than anything in a can.

My recipe is not very perceise because I make it to my taste and liking and you may adjust it as well.

Fresh Cranberries (one bag)
1 c. sugar
2.5 c. water
splash (or more) Grand Marnier
3 cinnamon sticks
pinch allspice
1 firm apple such as Fuji
1 can mandrin oranges
1 cup nuts of choice (pecans and walnuts are prefered)

Wash and pick bad cranberries from bag
combine water and sugar on stove top non reactive pot. add berries.
add cinnamon sticks, half pinch of allspice and grand marnier.
soon the cranberries will start to pop. when all are popped, continue boiling for 15 minutes stirring rather often.
After 15 min. reduce to low simmer and allow mixture to reduce. After another 15 min. turn off heat and transfer to shallow dish to cool. While mixture is cooling, peel and chop apple in to small cubes. add to still warm cranberries
When totally cool, refridgerate.
An hour before serving, add can of mandrin oranges and mix thoroughly. Top with nuts

It looks so pretty and tastes just like the holidays

I tend to make up my own recipes, but none of them ever turn out.

For last-minute things, I have these two cream cheese-based recipes:

Cream Cheese Torte
Take one slice of bread and cover with a thin layer of cream cheese. Repeat and stack slices five layers high. Trim off crusts, cover top and sides with chocolate icing. Serves up to 6, depending on how quickly people catch on.

S'more Surprise A great slumber party treat!
Cut cream cheese into one inch squares. Place on graham cracker and cover with a piece of a Hershey chocolate bar. Push down on chocolate until cream cheese spreads out to cover graham cracker. Serve to pre-teens, run.
