For those who want the recipe I came up with-
1/2 cup orange juice
1/2 cup white wine vinegar
1/2 cup sugar
1/2 cup low sugar orange marmalade
1 head roasted garlic- recipe to follow
1 cup low sodium beef stock
2 cups low sodium chicken stock
1/4 cup chopped cilantro
1 or 2 chipotles in adobo sauce chopped.
1 shallot minced
1 pork tenderloin sliced once lengthwise, and then cut about 1/3 inch or so on a bias (not that critical, but try to slice uniformly)
Wet the garlic and wrap it tightly in foil. Bake at 350 for 1/2 hour. Squeeze it out of it's skin and mash well in a bowl with a fork.
Meanwhile-
In heavy sauce pan-
heat the sugar over med. heat until it melts (it is now a caramel)
Add wine vinegar, OJ, marmalade, mashed garlic, stock, cilantro, and shallot and bring to a boil.
In heavy fry pan, brown tenderloin in oil on both sides.
Add to boiling liquid along with chopped chipotle, and reduce until the glaze becomes a little thicker than maple syrup. It will thicken a bit more as it cools
