chicken manchurian

Recipe for chicken manchurian (It's kinda sketchy, so if changes need to be made, just say so)

3 eggs
3 chicken breasts
small green peppers (not bell peppers) halved
1 clove garlic (full, not 1/8th of it or whatever)
All purpose flour, don't know measurement on this one, but read on.
soy sauce to taste
red chili/curry powder
salt to taste
pepper to taste
1/2 tablespoon brown sugar


first, crack the eggs, and put the insides into a bowl. beat thoroughly. add the salt and pepper, then beat once again. add the flour to the mixture, then mix it until you acheive a reasonable thickness.

Cut the chicken breasts into quarters, then mince in a food processor until it is fairly even, but still basically solid. Mix this in with the batter, and let sit for 15 minutes.

Fill a wok with about 3/4 of an inch of oil, and heat it. make the chicken/batter into small balls about the size of the ones in the picture, then drop them into the hot oil. once they are fairly yellow but not yet brown, take them out into any dish with a paper towel on it, so as to drain some of the oil.

Once you're finished with the chicken, leave some of the oil in the wok, until you have a small, 1/8 inch layer on the bottom. empty out the rest.

Chop the garlic rather finely, and halve your peppers. keep the seeds in them. Put these two ingredients into your wok, and stir fry them until they are reddish brown. add the chicken, and stir the whole mixture around. The burning of the pepper and garlic gives the dish its taste.

add the soy sauce and stir the mixture until the chicken is evenly coated, then add the red chili/curry paste and stir again. Now add the brown sugar and stir again.

VERY IMPORTANT
Cook the chicken well, now. If you remember, the chicken wasn't fully cooked before when you fried it. Cook for about 5 minutes, then take a taste. If it needs more sugar, add it.
