I was thinking about a G5 with 16 GB of RAM, will that be enough?

it will be fine, but not for the hardcore blacks on little boys stuff, you need 32GB for that

You might want to stay away from Apple incase you get any of those weird codecs. A dual dualcore opteron rig with 16GB of RAM should work just fine for that.
