Thai Peanut Sauce...Sinfully Delicious!

What's in this stuff anyway? I go to Bruegger's and decide to try their Thai Peanut Chicken bagel, and it comes with this little container of sauce. I thought it would be Bruegger's version of satay sauce, but it seems to be tastier and spicer! In fact, even though I finished my bagel long ago I keep dipping my fingers in this stuff slurping it all up. What else can I do with the extra sauce? Does it taste good with celery or crackers or something?

It's peanut butter and water all stirred up to even consistency. Perhaps a bit of soy or chopped peanuts or spices are added. You can make your own.

here's a good recipe for Spicy Peanut Sauce

1 heaping tablespoon peanut butter
1 1/2 teaspoons balsamic vinegar
1 tablespoon soy sauce
1 teaspoon honey
1/2 teaspoon Chinese hot red chili paste
1/2 teaspoon hot chili oil
2 tablespoons red wine
1 teaspoon lime juice or margarita mix
Vegetable oil, to thin if necessary
3 tablespoons water

In a food processor, place all ingredients except only half the water into the processor and blend until smooth. Add more water and some oil to thin out the sauce when necessary. Taste the sauce, if it is too thick or potent, add more water and more honey. Process until smooth

Satay sauce rocks. I hate peanuts, but satay sauce is great. You're saying this stuff is better than it?!? Must be really special :)

here is one for a more traditional thai peanut sauce

5 oz roasted unsalted peanuts
4 cups unsweetened coconut milk
2 tbsp red curry paste
2 tbsp sugar
3 tbsp lemon juice
3 tsp fish sauce

1. Blend or process the peanuts until they are fine meal. Reserve.
2. Heat half the coconut milk in a saucepan at high heat and add the red curry paste. Stir to dissolve and continue cooking at high heat for 10-12 minutes, until the oil from the coconut has risen to the surface.

3. Lower heat to medium-high and add processed peanuts. Stir and add the rest of the coconut milk. Bring to bubbling boil. Lower heat to medium and add sugar, lemon juice and fish sauce, Cook, stirring accasionally, for 15-20 minutes, until the sauce has thickened somewhat and the oil has returned to the surface.

4. Take off the fire and let rest for a half hour. Stir to blend oil that has nsen to the surface. It should be the consistency of thick cream. If thlcker than thatj add a couple of tablespoons of water or coconut milk and blend.

5. The sauce can be served lukewarm or reheated to piping hot. Leftover sauce can be refrigerated (where it will solidify) and then reheated on a slow fire, thinned down with some water or coconut milk. It can also be frozen, and reheated another day, the same way.

I love peanut sauce but fish sauce *BLECH*

too bad alot of Thai food is made with fish sauce. I always ask the chef "no fish sauce" and they always look at me like I'm from mars.*

Quite a process for a "do-it-yourselfer":
. . . the fish are rinsed and drained, then mixed with sea salt -- two to three parts fish to one part salt by weight. They are then filled into large earthenware jars, lined on the bottom with a layer of salt, and topped with a layer of salt. A woven bamboo mat is placed over the fish and weighted down with heavy rocks to keep the fish from floating when water inside them are extracted out by the salt and fermentation process.

The jars are covered and left in a sunny location for nine months to a year. From time to time, they are uncovered to air out and to let the fish be exposed to direct, hot sunshine, which helps "digest" the fish and turn them into fluid. The periodic "sunning" produces a fish sauce of superior quality, giving it a fragrant aroma and a clear, reddish brown color.

After enough months have passed, the liquid is removed from the jars, preferably through a spigot on the bottom of the jars, so that it passes through the layers of fish remains; or by siphoning. Any sediments are strained out with a clean cloth. The filtered fish sauce is filled into other clean jars and allowed to air out in the sun for a couple of weeks to dissipate the strong fish odors. It is then ready for bottling. The finished product is 100-percent, top-grade, genuine fish sauce.

Allowed? Prohibited by Whom? All you need is desire, some equipment and storage, know-how, and fresh fish. :p

Why? Perhaps you wanted to use all-organic spices or honey instead of sugar in making your sauce, perhaps even to market. Or perhaps you might just like "control" of a process or perhaps tired of buying "import" products. ;)
