When creating the rescue usb drive I ticked the box to enable Enable Multiboot (MBR/UEFI). Good thinking though. I also thought I may have formatted the thumb drive wrong.

I just remade the rescue drive and it worked this time. I have no idea what made it work. This new mini-pc is wonky. Something goes wrong every time I remove a cable or usb stick from the PC.
