All of Intel's codenames are taken from natural landmarks.

Tualatin = river in Oregon
Coppermine = river in the NW Territories
Banias = spring in Israel
McKinley = mountain in Washington
Etc...

That being said, I'm not sure what Tejas refers to. I doubt it's the state itself. *shrugs*
