Ingredients:
4 c. cooked rice oil 2 eggs
1 carrot - diced 1/2 c. frozen peas 4 scallions - minced
1/2 c. leftover meat salt or soy sauce


Steps:
1. Heat a wok or large skillet over high heat.

2. Add a little oil and wait a few moments for it to heat up.

3. Break the eggs into the wok and mix quickly to scramble.

4. When the egg is well-set, remove it and chop it into bite-size pieces or strips.

5. Wipe out the wok and add a little more oil. Wait for it to heat.

6. If the rice is clumpy, break it up with your hands so that each grain is separate.

7. Add the cold rice to the wok. Move the rice quickly around the hot pan by putting your spoon or spatula under the rice and turning it over. (This is the basic stir-frying technique.)

8. After a minute or so, add the diced carrots and move them about the pan with the rice.

9. After 3 minutes, add the frozen peas and stir-fry.

10. After 2 minutes, add the scallions, egg and meat, if using.

11. Season the rice with salt or soy sauce once the ingredients are well-mixed. Cook another minute or until everything is heated through.

12. Remove from heat and serve.


Tips:
The amount of oil you use is up to you. You need only a tablespoon or so to keep the rice from sticking.

You can put anything you want in fried rice: leftover vegetables, stir-fry or anything that seems interesting. Try fried rice with ham and eggs for breakfast.

Traditionally, fried rice is seasoned with salt instead of soy sauce, because soy sauce turns the rice brown. Whichever you choose, be conservative when you first add it. You can always add more, but you can't take too much back.

Try a few drops of sesame oil in the egg before you cook it.

Try some minced garlic and ginger in the oil before you add the rice.

If your wok is large, you can cook the egg with everything else: After the rice and other ingredients are heated, push it to the sides of the wok so there's an empty space in the bottom. Crack the eggs into the space and cook. When the eggs are set, stir everything together to break up the eggs.

Some people like ketchup on their fried rice.


Warnings:
Don't use hot rice, or you'll have a gloppy mess. Cooling the rice makes the grains separate.

Hmm... Fried rice. One of my favorite dishes. This is just a basic dish. If you really want to know about the stuff to put in it, give me a PM and some time. I'll research the names so I can tell you what they're called in english. I'll add some of my personal preferences in if you want too.

Equipment:
Wide pan or wok
Rice cooker
Big mixing spoon

Ingredients
Butter or Margerine
Jasmine Rice
Chinese Sousages (has a dark red color)
Eggs
carrots and peas (canned is fine)
Fish sauce
salt and pepper

The amount is really for you to judge. Like more meat? add more, like more veggies? add more.

Ok, time to get started.
Clean the rice and throw it and some water into the rice cooker. Get it to a regular texture, don't go dry or wet. After its done, leave it for about 10-20 minutes, then pop the lid and mix it up. Leave it in there for an hour or so and then cover, and pop it in the fridge overnight.

Ok, next day:
Heat up your pan or wok or whatever (referred to as wok from now on). Add some oil to the wok. While you're waiting for it to heat up, slice your sausages. Width doesn't really matter, just get them all about the same width. Ok, the wok is hot. Throw the slices in and just push them around until they're done. Be care full not to burn them. Ok, take them out and put them aside. Put the eggs in a bowl and mix. Add some pepper and mix. Throw the eggs in and mix. Ok, time to cook the eggs. Get them into little chunks - you don't have to get them small yet, they'll break up later. After they're done, bring them out into a bowl and put some butter into the wok. Wait for it to melt and throw in the cold rice. Get the spoon or whatever and mix and mix and mix. Once the rice turns a darker color (not burned), throw in the veggies and mix. Ok, now throw in the eggs and mix. Ok, now throw in the meat and mix. The mixing is when the eggs break up. Oh, and add fish sauce to taste. Don't forget to mix. :)

simple but tasty.
1 lb bacon diced and fried to almost crisp..1 dozen green onions (scallions) silced thin, green and all...add this to the rice with a little soy sauce, just enough to turn it brown. stir and eat.

sweet i love fried rice! theres 3 carts around UT that each sell a pint of fried rice for 1.25. damned cheap. the carts vary... the one near engineering has better rice, the one on the south mall has better lemonade (so nice sitting on the grass on the mall drinking a lemonade)

The cold rice is important. Leftover rice from last nights dinner make perfect fried rice.

Don't use canned peas also. They are usually too mushy to make a good fried rice. Frozen is much better.

My basic fried rice usually has these ingredients:

Rice (duh :))
Peas
Green Onion/Scallion
Egg
Char Siu (chinese BBQ pork)
Lap Cheung (Chinese Sausage)

I'm not a big fan of carrots, celery, or lettuce in Fried Rice.

Turkey is good in fried rice as well. You should see my place after thanksgiving, pots and pots full of turkey fried rice. :)

Haha. So thats what YOU do with your leftover turkey. Over here, my mom turns the turky into cha bom (that how you spell it?). The turkey is torn into strips and basically dried and salted a bit.

I find that (somewhat) dried cooked rice is usable. So is Spam.

But definitely cook the rice. Don't make the same mistake as my dorm cafeterias and attempt to make fried rice with uncooked rice. They tried to cook the rice in the wok while they made it by adding water.

I hope you don't have a electric range on your stove, cause you can't make real Fried rice on those. YOu gotta have the fire, thats what Make the fried rice good.

I cook bacon first, and use the bacon grease instead of oil, for more flavor. And then add the bacon to the mix later on.
Of course, it's not as healthy.

I buy ham at the deli, sliced think, and dice it up.

Sometimes I add soy to the water when I boil the rice, so it's cooked into the rice the day before.

As a Chinese myself, I never put peas or carrots in my fried rice. It's really an American thing I guess. But whatever floats your boat.

Here's how I do it in my Chinese way, really simple but good:

Pre-fry Stage

1) Cook rice, even better if the rice is left over the night before taken out from the fridge (fried rice is not supposed to be sticky)

2) Beat egg (2/bowl of rice) in a bowl, add white pepper power and salt

3) Cut scallion in ~5mm segment (1 piece of scallion/bowl of rice)

4) Cut beef or chicken in slice, marinate with soy sauce, corn starch, salt and white pepper powder for about 15 minutes

Frying Stage

1) Pan fry the meat to 70% cooked for beef, 90% cooked for chicken

2) Fry rice in medium heat till it is hot, real HOT

3) Turn heat down to low, add egg into rice and stir quickly (That way you can color the rice yellow)

4) Add meat when egg is about to be well-done, not totally done. (This is very important as you don't want the egg to be overcooked)

5) Keep stirring until everything is hot to eat (Yes, I like hot food)

6) Enjoy your meal and tell me how good it tastes :d

i don't know about you.. but i season my fried rice as i'm cooking it with the seasoning packets out of those instant ramen packages.. man it makes everything taste REALLY GOOD. Oh and i also put in those red chinese sausages.. um.. i think you call em lac xuong (spelling?) in vietnamese.
