Switching over phone service

So, my brother and I are switching off my Dad's plan on Cingular, to our own on sprint. I know we will be able to transfer the #s and everything, however, how long does that switch take? Will there be a period where neither of us do not have phones?

Also, he lives in Cali....and he will probably be getting the monthly bills. Is there a way it can be setup for one of us to just be able to go to any sprint store and pick up the phone we decided to get with our plan?
