the cabinet has the ability to play roms via the many emulators (NES, SNES, Gameboy, N64, arcade, atari, etc) that we included

that's what all mame cabinets are

the software can take a lot of time to setup when using a nice frontend that can be used with the joysticks only. My friend probably spent 50+ hours on that aspect alone

I don't remember posting about MAME related things more than a handful of times
