Sweet Potatoes....So Good!!!

I made ~6 lbs of sweet potato cassarole on Friday....and I just finished the last of it for lunch.

Sweet potatoes rock!

Also, for Thanksgiving two years ago I was studying abroad in China and managed to make a sweet potato casserole using sweet potatoes bought from a street vendor. Got like half a dozen of them, mashed them together with butter and brown sugar from the local supermarket, and made a topping out of butter and brown sugar with pecans set in it.

Pretty simple recipe with few ingredients, but the results were GODLY. I was amazed at what I was able to make in a country where many standard grocery items aren't available.

Mix up mashed sweet potatoes, sliced apples, cinnamon, sugar, and sprinkle with cheddar cheese to melt on the top.
