Which would be the proper usage?

Depends on context. If you referring to the "Sun" as in specifically to the star in a scientific sense, I would use "Sun". However, if you were using it colloquially, such as "the sun was hot" then I would use "sun" because thats what everyone uses it as.

Sun, Moon, and Earth are all proper nouns; therefore, they should technically all be capitalized.

Sun is a proper noun. The Sun is actually a star as I'd assume you know. star is not capitalized because it is not proper. Kinda like Earth is a planet.
