Suggestions on Vid Card and Other Q's

I'll make it simple. I've never built a computer before, but I'm building one now. So far as overclocking is concerned, I'm willing to do a little, but I'm not a big risktaker, and I know next to nothing about overclocking. Also, I'd like this computer to run fairly quiet. From research and lots of advice I've come up with this: http://secure.newegg.com/app/WishR.asp?ID=1397930

That's my basic system set up, minus the video card. I'm not sure what to get, I was considering the 6800 GT, but then others suggested the X800 XL and the X850 XT... so that's the main thing I need advice on. I'm willing to wait a bit if the price of one of these is expected to drop.

Also, I need a wireless adapter, but it doesn't really matter which one I get right?

ALSO, do I need 1) any extra cables? 2) extra fans/to replace the stock case fans? 3) any other accesories that I'm missing? I'm a super newb to this computer building world. I appreciate any advice that you can give.
 
Nice pile there. I'd suggest grabbing an X850XT if you're not planning on going SLI in the future (Need to get a different board too.)
For wireless adapters it's usually best to pick one made from the same company which made your router.
You won't need any extra cables, usually the motherboard will come with all that you need unless you're going to fill up all the SATA slots, etc. etc.
I'd suggest grabbing 3 more fans (80mm) to stick in your case.
 
Any particular fan brand that is quiet? And should I wait a bit for the X850 XT's to come down in price / any particular company?

Won't 3 more fans make it loud? I've heard you can only plug 3 fans into the fan only controller, and that any extra fans would run at full power and be loud?

Fan noise is definately an issue if you're going to add multiple ones and don't get ones that are designed to be quiet.

You can get adjustable fans and turn them up and down to your taste / ambient temp. or get some that are designed to have good output but be silent.
I've never used them, but Panaflo fans are highly recommended for silent running.
 
Neat, thanks for the suggestion. I don't need it silent, I just dislike helicopteresque sounds. And quiet is nice.

EDIT: May I add another question? I seem to be getting a good deal with free games and such getting a mobo+CPU combo from MonarchComputers... but since I'm getting a custom HSF, and they want to test it, should I just order the retail from them, have them test it with the retail HSF, I remove the retail one, apply the arcticsilver and put my Zalman CPU on?
 
Also, just for a bump and because I have another Q... since I'm not gonna overclock heavily, I assume the 2.5 Latency Corsair Value Ram is fine?

You should really visit SilentPCreview to learn about noise issues.
Summary:
More fans = more noise
Large fans move more air at slower speeds = quieter
The best heatsinks will allow you to run with less fan noise (Thermalright, Zalman)
Good cases allow better airflow
Good fans avoid unusual sounds such as whining (Panaflo, Acoustifan, others)
Fan controllers or simple resistors allow you to reduce fan speed to balance cooling and noise.
Quiet power supplies have a single large fan and no extraneous noises.
