Suggestions for this build?

The GPUs will be the GTX 280's.

I plan on replacing the motherboard/memory/CPU (which I will probably sell to my friend for his computer) with the Nehalem Bloomsfield socket + CPU combo, thus why a 1200W PSU is included in that setup, despite it being excessive for the time being.

Nobody needs a 1200W PSU, even with Nehalem. You could run two Nehalem setups comfortably off that. I think the 680i mobo isn't great, and although it's your money to waste on SLI I'd probably get a 750i were I willing to burn that much cash. You can get cheaper RAM that's just as good from G.Skill. The Velociraptor is a waste of cash but if you're experiencing a placebo bottleneck then why not.

Change the motherboard as rogue suggested to a 750 if you insist on SLI. Get the G.Skill PC8000, it is faster and cheaper. One raptor plenty, two is just a waste, do you really want to back-up a 600GB raid array? Get a decent cooler. You're willing to spend $600 on HD's but cheap out on the HS? Look at Thermalright 120 Extreme, Tuniq, Zerotherm 120mm among other.
