Structured Network vs WiFi

I recently bought a home a couple months ago, 1300sq ft built in 1980. I live pretty much alone 24/7 aside from having my daughter on weekends and such.

One of my goals with this house was to wire it with CAT6 and RG6, 10 outlets total with 2 coax and 4 ethernet at each outlet. An example as to why I want this many connections at each outlet is as follows:

Coax 1: Connected to OTA antenna
Coax 2: This could be used for Cable TV/satellite
Ethernet 1: Connected to SmartTV
Ethernet 2: Connected to Game System
Ethernet 3: Connected to Steam Link/nVidia Shield
Ethernet 4: Used as a spare, or for computer (Media Center PC)

This wouldn't apply to each room for example, like my office most of the Ethernet ports would be connected directly to various computers.

I would run a RG11 Coax Line from my cable box on the other side of my house to my utility room, as well as a CAT6 from the POTS Box to the utility room in case I decide to switch to DSL at some point or use it as a failover internet connection (I telecommute a lot)

My internet connection is currently 200/20 but is slated to be upped to 300/30 soon and both, my telco and cable company are working on rolling out Gigabit.

In my utility room, I currently run a single server (HP ProLiant DL160 G6) running various servers which is pretty much at it's limit so I am planning on adding additional servers.

I already have some tools, keystone, faceplates, and retrofit outlets. I just need to get a 42U rack and patch panel and the cabling. I was hoping/planning on doing this all myself, but after trying to crawl around my attic, I don't trust myself up there and don't want to risk stepping through (I have blown in insulation so you cannot see the trusses) and I have a gable style roof and unless you are in the center of the attic (which you have to crawl as it's only 3-4 feet tall) the roof slants... and I don't trust myself trying to lay down crawling on top of insulation where I can't see the trusses.

I've been getting some quotes to wire my house and it's anywhere between $3000 to $6000, which is a bit much as I can terminate everything myself, just need someone to run the lines and cut out the outlet holes.

So... I'm thinking of a few options...

1. Just stick to wireless and upgrade my equipment to support faster speeds (I have an AC1900 router now and my cards are everything from 2.4 Ghz N to 5 Ghz 600 N, I have no AC adapters)

2. Have someone run flexible conduit from the outlets to my utility room and I can simply pull the wire myself with fishing tab and wouldn't have the need to go into the attic. I would think this would be cheaper?

Suggestions? I would love to be/want to be a "do it yourself" type of person, but I never have been and tend to screw things up when I try to do anything myself.
