I've been running an upgrade Windows 7 64 bit to Windows 10 on my X58 for close to 10yrs now. A recent sfc/ scannow says there are corrupt files that can't be fixed.

Running a Xeon X5960 too

Is my system unstable?

Have you tried running the DISM restorehealth command yet? I've found that if SFC throws the error you described if I run the DISM command then restart and run the SFC command again it is able to repair the corrupted files. It might not work for you but it's worth a shot if you haven't tried it already.
Code:
DISM /Online /Cleanup-Image /RestoreHealth
