Stock 3800 X2 and 7800 GT

well, maybe. 3800+'s only run at 2.0, so its like a 3200+ venice on most single threaded apps. Most games these days are GPU not CPU limited, so I guess it shouldn't matter too much.

They OC very well though, so I think you should try it out. I got to 2.4 on stock volts easily which is like a 3700+ with games.
