I'm trying t figure out how to stitch together a ton of text messages into one long jpeg. How do people do that?

"text messages"? In a web browser? Pixlr Grabber add-on for Firefox?

I've been able to get some work done using the free MICE, but can't say it's all that great.

(Microsoft Image Composite Editor (free)

Back on XP, and now on Win7, I've never been able to get its feature to drag & drop jpgs onto its editor window to ever work. I've always had to make a NEW panorama and then open each jpg for that panorama from within MICE.

If you have a similar app that came with your camera, use that instead. I used to have a much better one from Canon, wonder what ever happened to that...

If you've got nothing better, then try the free MICE. My use of that sort of app is rare so I haven't gotten into it that much.
