I haven't but to my understanding is everything works fine provided its not an online game like Eve or similar. I do know you need to occasionally connect it to the internet to keep it working. I don't think anything special needs to be done.
 
Had a recent issue where I couldn't play a game Offline. I think it was Fallout New Vegas, although I don't remember what game it was. I think it was because I had Cloud Saves enabled.
 
I only play Steam in offline mode, mainly because I don't have internet at my house. The main thing is to make sure you start the games you want to play online once, before going in offline mode. I learned that lesson the hard way.
