Filet - the obvious choice of the elite bugiouse! Ribeye is the choice of the proletariat. All kidding aside, I prefer a nice porterhouse - options are where it's at.

option 3: USDA prime tenderloin and make myself a 12 ounce fillet. or several, for that matter.

Porterhouse. Best of both worlds. I agree with whoever said a ribeye has too much fat. I don't buy the explanation that more fat should make it taste better. I hate the taste and texture of fat and gristle. It simply doesn't taste good to me. I would eat a medium-rare filet, porterhouse, or sirloin over ribeye any day.

Ribeye rare for me - it's a man's steak on the grill! Filet mignon just sounds too frenchy -> chick's steak.

I don't eat the fat, and I hate throwing away half of what's on my plate. That's why I prefer NY strip.

I like the ribeye, but at just two bucks more (assuming it's not like half the size) it's not a bad price for the filet [i think...]

Fat, in this context, is not the thick strip flanking the steak that one would trim out (in prep or during eating)

The fat that makes for a "marbled" steak are the small flecks of interstitial fat that makes a steak soft and juicy

so you couldn even cut it out, had you wanted to

marbled steak
