SSD as boot drive and RAID on my storage drives?

I had 2 500GB drives in a RAID array before I bought a new Vertex LE 100GB drive. I enabled ACHI in the bios and installed Windows 7 to the SSD w/o a hitch. Can Istill use my original 2 drives in a RAID array? I will use these drives primarily for games, pictures, music, etc.
 
As long as you have the RAID controller and ports, yes - it should be no problem.
 
My RAID controller is on the motherboard and I have plenty of extra ports. I bought this computer from Cyberpowerpc, I used to build my own computers and was more technically savvy but have not kept up with them for several years.
