Split audio by monitor, one on BT headphones

I have a monitor attached to my laptop (Asus X555 with an i3-5010U) via HDMI. In the Windows Volume Mixer, the monitor shows as Intel Display Audio and the speakers show as Realtek HD Audio. If I have two controllers/sources, why can't I have separate streams?

Essentially while one device remains default output and is configured normally, a hidden recording device called stereo mix can be configured to listen to that device and output to a second device.
