Dang, the demo rocks. Starts off on the train level and you duck in through a vent shaft and get started

Kind of on topic: I want to buy either Rainbow Six 3 or the original Splinter Cell (for PC). Which should I get, and why?

I haven't played any of the Rainbow Six series, but I figured that 3 would look/sound/feel the best. Splinter Cell has gotten plenty of good reviews.

So?

Two different styles. One's squad based, one's solo/stealth. They're both excellent games - you can't go wrong with either or, or in that case, both.

I KNOW that at least Rainbow Six 3 uses the Unreal engine.

SC's engine was based off a heavily modified Unreal engine. R6 for the XBox anyway is based off a modified SC engine.
