As pointed out in the comments, the car model (and I think one of the motorcycles) is hacked. From my experience playing VC and SA on PS2, the motorcycle physics and/or retention (staying on the vehicle) are hacked also.

In SA, you can go to motorcycle school and train your skills until you're much better than in VC, and those crazy jumps and spins are still not even close to possible. I did pull off a full flip (usually you fall off as soon as you invert) in VC, but I was never able to repeat it.

That makes sense, i repeatedly fell off the motorbikes in VC trying to do even basic stunts
