I made it today with red pepper flakes and smoked bacon, it is fvcken simple and sooooooooooooooooooooooo good.:)

TRY IT.

Think you wanted this in OT, but yep, it's good :) I think the authentic dish uses prosciutto instead of bacon, but seeing as it's $16.00/lb, bacon is good :)

Yeah, it's one of my favourite dish... but man, the amount of fat (at least the way i like it).

I like the cream version much better than the recipe in the OP.

I haven't tried your version. I do LOVE the creamy version made with heavy cream, parmesan and prosciutto.
It is also amazingly easy to make.
Every so often I splurge on the fat and calories and have a big bowl.

Nah, if I GOTTA eat spaghetti, I want Spaghetti Bolognese with some great meatballs...the cream sausces just don't do it for me.

Its not creamed (unless you add cream to the eggs). I like to throw some hot italian sauages on the foreman while I cook this dish. When the dish is ready I top it off with sliced italian sausage (as good as meatballs). BTW basil makes this dish a 10/10.:)

Not necessarily the best, but certainly in the top couple and one of the easiest to make. That recipe you posted SUCKS though. Substitute butter for the olive oil and add a half a cup of milk or cream for REAL carbonara. Also not a bad idea to double the amount of bacon called for in any carbonara recipe. I use a whole pound of bacon when I make it.

hrm, do you just crack the eggs on to the spaghetti+bacon mixture or do you mix the eggs first before throwing it into the spaghetti?

I think you beat the eggs and than pour them over the hot noodles (the residual heat "cooks" the eggs.)

My dad, who is a vey good cook, used to make this when I was younger. A couple friends ate over one night when we were having this and they couldn't get enough.

Actually for authenticities sake you should use pancetta, which is what I use. Regular bacon is an adequate subsitute though.

Either way it is freaking delicious!
