Why do some laptops use a P4 3.0ghz CPU while another is a P4 M 2.0ghz cpu but the M usually costs more? Is there a benefit with going for the 2.0ghz for gaming?
Different chip designs. The Pentium M is much faster than intel at the same clock speed, just like AMD A64 chips. The Pentium M also uses much less power than a P4 so battery life is better.

True, but Nessal probably saw a Pentium M not P4 M based on the clockspeed listed.
(I can't recall the last time that I saw a P4-M advertised, for intel it's almost always either Celeron M, Pentium M, or regular P4 in some gaming systems)
