Wouldn't you think that the separation b/t her legs would have created a fairly large open section through which the air could flow. She must have had some serious thunder thighs to completely seal a toilet seat.

That may be partially true, but toilet seats on airliners are typically quite small. Here for example is a regular toilet seat:
