I am going to assemble a new rig and wanted any feedback or things to beware of that you good people could provide.

I think that Soyo has onboard RAID and the Epox doesn't, right? It also has tons of features and performs better than the Epox, so I say stick with the Soyo. I think everything you have listed looks really good except the CD-ROM. I think the extra $ would be well spent getting a Lite-On DVD-ROM, but that's just my opinion.
