they are amazing, but also stretching origami, there were a lot of cuts instead of folds to make them.

I don't believe that Eric Joisel uses any cuts in his folding. Only the work in the second link involves a lot of cutting.

Cutting is not forbidden to origami. It actually used to be more common in the past...however; people became more amazed by those that can do this without any cuts.
