Don't know what chemistry is involved here but some type of hydrophobia / hydrophilia seems to be involved I'd guess.

Dont believe me? Look it up on youtube, watch it with a version that is 480p, you can see on certain angles the marbles/ball in the liquid deep in the liquid. And you can see them displace when he dips his hand in. Oh and his fingers are dripping with liquid...not to mention the 'balls' would attempt to join into one giant ball if taken out of the liquid instead of many numerous smaller ones.
