maybe what you would normally use, I believe this could be very different for different people, but nero, word, excel, virus protection, dvd playing software would be a good start

The essentials, all freeware for personal use.
Install the following before you connect to the internet :

Kerio Personal Firewall V215
AntiVir Personal Antivirus
All the updates for Windows XP (SP2 full network install is a given if your xp disc does not already have it)

Software i find handy to have on my PC:
Miranda (similar to Trillian, except total freeware and uses very little system resources and has no bloat)
Open Office (freeware office package)
7-Zip (freeware, bloatfree compression utility, works with all major formats)
Real Alternative (no bloat, plays real player files thru MPC)
QuickTime Alternative (plays quicktime, no bloat, thru MPC)
FireFox (secure web browser)
Thunderbird (secure email client)
Java (needed by various applications)
Azureus (bit torrent client)

My suggestion : Download all of the programs now, put them on a disk. You'll have some nice clean installs without having to TOUCH internet explorer.
