Soft Shelled Crabs

i think crabs always have their faces cut off during prep. ever notice you've never ever seen a crab face when having crab at a restaurant? heck with softies they can do it with a snip fron sissors. 🙂

i've had soft shelled crab sandwiches, good stuff🙂 and so very neat looking🙂
 
i like soft shelled crabs because i like to make fun of their being so weak as i tear through their protective shell with my teeth.

Yes, everything. They do not gut them, they don't clean them in any way aside from scrubbing them and keeping them in an empty tank for 3 days or so previous. (gets the poo out) Though they might cut off the head if its easy to do. Otherwise you just throw 'em in.
 
eh, cutting off the head is easy to do for even hard shells. its not going anywhere🙂 cleaver or heavy sissors.
 
I've never eaten a whole hard crab before, let alone a soft-shelled one. Typically I just break their legs and eat the pink-tinged sweet stuff inside. YUMMY!

i think they are mostly avaliable at the east coast. i got mine in massachusetts😛
 
they fry the crab whole and you eat the entire thing. Because the shell is soft, it is edible and leaves no real taste.

It is almost impossible to break a soft-shelled crab shell. You can tear it, sure, but breaking it open and extracting meat is damn hard. Think of the shell like potato skin, i.e. adds extra flavor to the whole thing. (roughly the same consistency once you cook it too)

Soft-shelled crab are really damn tasty, though the center bit is typically a little saltier. The crab is usually so small it has a lot more flavor -- good flavor -- and the texture of the crab is just wonderful. They make great sandwiches, great standalones and great sushi. Next time I go to the DC area I am going to make it a point to have some good soft-shell.
 
yea, i took a picture of my sandwich, but its not digital so its somewhere lost amoung thousands of other photos🙁 too lazy to look for it bah.
 
I remember having "Spider Roll" sushi once. The soft shell crab in there was whole, eyeballs and all (although it was very, very tiny).
 
Good lord, don't you guys cook?!?!?!

To clean soft shelled crab, you cut out the eyes, and mouth, remove the apron, carefully peel the top without removing it to expose the lungs, scrap them off as you can't eat them. move the top back after you're done.... the crab should be dead now. Don't belive me? Check out the Maryland crab council website.

now, Asian cooking might do it differently.
 
Your supposed to remove the gills from a shoft shell crab since their gills breathe in so many toxins from polluted oceans. Eating those gills is like eating poison.
 
I've aslways cooked crabs whle by just tossing them in a pot full of boiling water, although it hurts to watch them squirm when they hit the water 🙁 The last time I did it, the crab grabbed ahold of the tongs i was using to but it in the water with, and only half of his body went in. He held on for a few second while flailing wildly, then he died 🙁
