Im building a relatively inexpensive socket a system and was curious whether the kt600 or the nforce2 chipsets were the most stable in a non-oc'd setup.

Both are fine. BUT stability comes form a LOT MORE then just chipset. What kind of power supply, Ram, heatsink, etc....

Avoid Codegen power supplies, make sure your mainboard, CPU and RAM specifications match each other. Check your RAM once you have it (www.memtest.org), make sure cooling is adequate and properly mounted. Voilà, stable system. No matter what chipset.
