I'd wait. You may be suprised to find AMD fully embracing EFI with 1207. If nothing else, Intel may not be a bad choice in the near future with Conroe. Nothing you do could utilize 4 cores simultaneously, unless you have a burning desire to spend a ton of money just so you can do F@H all the time. Certainly don't get anything Intel now though.
if you didn't already know you were getting an Areca Arc-1220 you do now.
Newegg has the best deal. I have several Areca HBAs, and the ARC-1230 w/1GB upgrade is the fastest HBA I've ever used. Ever. Though, either way 250GB drives FTL.

I'd rebuild the array with
WD3200KS (cheap POWAR) or
WD4000YRs.. WD5000KS are supreme now, but definitely not cost effective.
For PSU wait for the Seasonic M12 700w modular.
If you do decide on Dual 940, i use Corsair CM72SD1024RLP-3200 RAM for my sig rig.
