Me and Mrs. Sho'Nuff hosted lots of family and friends this year for Easter lunch/dinner. About 30 people showed up, so lots of hungry mouths to feed. I wanted to do something non-traditional so I decided against the normal Easter ham and/or turkey, and decided to do beer brined, beer can chickens on my Weber grill. Cooked up four of them with a little apple wood smoke for flavor. Served with bacon wrapped smoked apricots, jalepeno poppers, homemade mac and cheese, and corn bread. Must have been good because my relatives descended on that meal like a pack of hungry wolves.

So, what did you all have to eat on Easter? Same old same old? Or something new?

My wife went to the sister in laws and brought some of her excellent ziti and homemade sauce and meatballs home, but I didn't even feel like going anywhere today and haven't even reheated it.

4 beer can chicken for 30 people sounds like too little food.

I wanted to stay home and eat steak and king crab legs. I got dragged out and had to eat tofu soup.

White rice, macaroni salad, hamburger steak with brown gravy, and beef curry! Great combo for being stuck at work...

GF's family wanted to go to Bob Chinn's and have some crab legs. Can't say I was particular impressed, especially for the price. Nice day though.

Woulda thought with 30 people might needed at least a dozen chickens, but it looked good.

My wife was on a cruise to Cozumel with her Mom, so my middle daughter whipped up dinner this year: rib-eye steaks, twice-baked potatoes w/cheddar, sauteed spinach and mushrooms, caesar salad and a key lime pie to close.
