So if I have 11 bottles and some water...

well, to have a complete set of notes, you'd need: C, C#, D, D#, E, F, F#, G, G#, A, A#, and B. That makes 12 notes. With 11 bottles, you'll be one short. Just play a tune in C major and remove one of the accidentals (black keys)
 
Yeah that's a little problem. I think I can find another bottle. I'm looking for some string and I should be all set.
