1 cup water

It goes dry - starts to burn - and the rice is still crunchy.

How do I do this right?

Edit: I say that because my rice usually comes out weird too, the rice cooker does it *perfect* every time!

Stand in front of meal...add water before it burns...

1) Suitably sized caserole (or something with a cover)
2) Fill in rice (rinse with water about 2 rounds until it isn't so cloudy)
3) Add a fingermark of water (tip of your index finger to the first "joint")
4) uwave for 10 mins UNCOVERED
5) uwave for 10 mins COVERED
...
Profit! ;)

Edit : Add slightly more or less water depending on how "mushy" you'd like your rice to be.

For small amounts such as you listed, boil water, add rice, cover, turn burner down to lowest setting for 15 minutes or, do it in the microwave. Truthfully, you really have to work at it to mess up rice. Sorry but, some folks were meant to starve. :)

I tend to use basmati rice which is an extra long grain rice. 1.5 cups of water per cup of rice.

I melt a teaspoon of butter in a saucepan on medium heat, then put the rice in and stir it around to get all the grains covered in butter. Let it sit for a minute, then turn it up to high and add the water with a pinch of salt. Cover it and let it come to a boil, then turn the heat down to low for 15+ minutes. Fluff it up with a fork and you're set.

I don't make the white rice, eating pilaf is in my blood though.

You probably just need to turn down the heat from a vigorous boil to more of a simmer. I always test my rice when I can look down into the rice and see 1/2" of water in the bottom of the pan. If it seems pretty well done, I turn off the heat, give the rice one stir, and cover for 10 minutes. If it's still crunchy I'll add some water and repeat the tasting in five minutes.


Pilaf:
Brown some fine egg noodles in butter (warning: it'll the go from brown to black real fast) , then dump chicken broth and rice in the same 2:1 ratio and simmer until done.

I just cooked rice for the first time tonight, I followed the directions on the package. 2 cups water + 1 T butter + 1t salt + 1 cup rice. Bring to boil, lower heat, and cover, keep covered for 14 minutes. Aside from me using too small of a pan and it boiling over and making a grand old mess the rice came out just fine :p

Use an appropriate size pan that will cook the rice when its spread out evenly in the pan. Put in about enough water where it is the depth of about an inch. Cover and cook.

Low heat for longer is the key to making most foods turn out better.

Your water is boiling off before it can soften the rice. Hence... TURN THE HEAT DOWN SO IT DOESN'T BOIL OFF.

For a forum full of geeks it's amazing how many people don't understand simple science concepts.

It is as simple as 1, 2, 3 ...

One cup rice to three cups water.

Cook the water, when boiling, drop in the rice, stir a little. When the water returns to a boil, let it boil for a minute (no longer), then turn off the heat.

Ensure the pot cover is in place. Wrap the pot in newspaper, wrap a towel around the newspaper and pot, then place the pot in your bed under the comforter. Let the rice absorb the water for at least an hour.

This procedure works best when the rice is cooked in the morning before you leave for the day. Let the pot sit in bed for the whole day and the rice will be perfectly warm and moist for dinner when you return home.


EDIT: Salt and butter may be added for taste.

What kind of rice and what heat setting are you cooking it on?

For white rice you have the proportions right but you need to cook it in a small, covered sauce pan on low heat. Boil the water first, then add the rice, then move it to the smallest burner on your stove and lower the heat to the lowest setting. Simmer it for 20 minutes and you should have perfect rice.

Whole grain rice takes longer to cook.
