Oh how I hate mushrooms and onions. Onions over power everything I eat...and mushrooms are a slimmy fungus.

Though for some reason I can eat them in tomato sauce.

Almost exactly what I had, sans mushrooms...can't stand fungus for breakfast.

I had a 4 egg omelet complete with the yolks, cooked in a little bit of bacon grease that was left, with some small chunks of steak and cheddar cheese mixed in, 3 slices of bacon, and 2 glasses of OJ. My cholesterol: "Damn you! I hate you!" "Why" "You have a horrible diet, yet all your blood tests came back as ideal. Most people don't even set a goal of having a bad cholesterol level as low as yours."


Now, if only I could get the blood pressure down :p

You can't really call what I make an omelet because the eggs are such a small part.

Fry up a small zucchini, large handful of spinach (chopped), onions, green peppers, garlic, a little feta or swiss cheese, some slivered almonds, some chopped up turkey breast, and a couple of eggs. Spice it up with jalapeños, Mrs.Dash's extra spicy, and some Emeril's essence.

But, I try to do this before the wife wakes up or she gives me hell for smelling up the kitchen.

Oh man! Reminds me of my favorite, I call it "Southern Omelet" (recipe inspired by "Western Omelet":
4 whole eggs, beat in a little milk for fluffiness, cooked in a little bacon grease. I kinda lightly scramble the eggs just until nearly done, then lift up to allow the remaining uncooked egg to coat the bottom, sealing it.
Then, I add crumbled crisp bacon, chopped onion, chopped green pepper, cheddar cheese, salt & pepper.
Turn down the heat to low & cover for 5-8 minutes (until cheese melts), uncover, check that the eggs are done, fold & serve. (Sometimes I like to brown my eggs somewhat, depends on my mood)
Delicious!
