SMTP Virtual Server problems in win2k

I'm having a problem with messages sending using the SMTP virtual server in win2k server. It is interfacing fine with the email clients in the office, but sometimes the messages won't send from the SMTP server; they just stay in the queue folder. Sometimes they will go immediately, but then other times they won't send right away from the server. But they will eventually send, usually, about 4 hours or more later. I set up the virtual server with all the default settings, and they seem to be right, but its just acting weird for some reason. I've tried the included help file, etc., and it hasn't been much to say the least. Is there any sort of good documentation for setting up something like this online, or can anyone out there suggest any ideas as to why I might be experiencing this? Thanks!
