SMTP, IIS, Multiple domains setup. Need some help.

I have local access to my own dedicated web server (win2k Advanced server) with IIS running. It has multiple domains names/websites on it but only one IP address. I want to add multiple email accounts for each domain name.

I have SMTP installed and have created virtual servers for each domain. After that I'm a bit lost...

How do I set it up so each domain has email addresses available (email@mydomain.com) that can be accessed through outlook (or any other SMTP/pop3 email program)???
