Maybe see if the Garmin Vivosmart might be up for all your requirements. It has double tap to wake.....

As in to wake your phone, or to wake the watch?

If it's the watch... there are smartwatches that don't support this?

Yes, wake the watch. I have an old Samsung gear, the original one and it doesn't have this feature.

!! That's crazy town. Nowadays, other than the Gear S2 (I'm probably wrong on the name, the newer Taizen Samsung watch), and the AppleWatch, they should almost all be running AndroidWear, maybe check if that's a standard setting?

I thought that as well. But they also all probably have an auto-sleep-display timer, (at least my AppleWatch does), and if I'm actually watching the second hand, and it takes longer than the timer, I need to tap the screen to wake it back up.

Pretty sure this is a standard "smartwatch" feature. My LG G Watch does it, but then so should any Android Wear device.
