Smaller networks faster?

I'm going to be installing an XServe with about 20 computers attached in a classroom. The computers will be transferring huge files (video). Is there any advantage to setting up NAT and a DHCP server for this classroom to segregate it from the rest of the school (300+ computers on a 10/100 half duplex network) speedwise?
 
I know Im going to need gigabit since Im sending video to the server room where its distributed throughout the school. I have fiber to there. So Ill need a switch that can go from gigabit copper out of the xserve to fiber, and also have at least 15 more ports. Any ideas how much money Im looking at spending or brands/places to buy it?
 
Well, if you are looking to save money. Go to e bay and check out Cisco 2924 or 2948 switches with the GBIC modules.
