SLI Question from a NUB

I am looking to upgrade my system and I am kind of confused about the purpose of SLI. Is this only beneficial when you are running dual monitors? Or do the two card work together? Here is what I am looking at so far.

AMD 64 4800 X2
Asus A8N-SLI Premium or A8N-SLI Deluxe (nforce4)
2GB Crucial XMS 3500
2 x 7800 GTX 512's (Maybe one to start)
2 x 74GB WD Raptors

Keeping
Audigy 2ZS
2 x 250GB WD
Enermax Noisetaker 470W
P180 Case
