SLI newb question of the day

Is there any special procedure to follow when updating drivers on an SLI system? Will the video SLI settings remain enabled?

No special procedure. Uninstall as usual and open the .exe

It will install the driver twice, reboot and you're good to go. I'm not sure if u have to reenable SLI after, been a long time since I ran SLI. Just double check in SLI driver tab to verify multi-GPU is enabled. If it's not just check the box.
