Look at this benchmark comparing a single 8800GT to a single 8600GTS (which is faster than an 8600GT, obviously). The 8800GT absolutely destroys the 8600GTS, with more than double the performance. Which should give you a good hint to my answer: the 8800GT is a much better choice. Especially when you remember that SLI doesn't always scale well and almost never approaches 100% scaling so you can probably expect 2x8600GTS to give maybe 75% of the performance of a single 8800GT.
