I don't need a brand new one with color screen and all that crap. I wouldn't even mind one of the old large devices with the notebook-size hard drives.

I just want a VERY SIMPLE UI and recording cability

what do you recommend that I could find on ebay?

btw I used to have an eDigital Treo 10 before it broke and I still maintain that it is more usable than an ipod
 
I'd say iRiver IHP 1x00 if you can still find one.
If you can't, I don't know really, but they are pretty simple to record with, and have a built in mic and a line in.
 
also it should be very hackable and upgradable with a strong open-source following (like rockbox for archos)
