Sides to go with stuffed peppers

I have some stuffed peppers baking in the oven. I need some sides to go with it.

The peppers are pretty simple - beef, rice, peppers, onions, oregano, tomato. This is my first time making them and I'm not sure what would go well. I have about 20 minutes until they're done. Any suggestions?

I can't think of much that would be done in 20 minutes, including purchasing time. I'd be thinking along the lines of couscous or tabouli.

Yea, 20 minutes isn't a lot of time. I probably should have thought of this beforehand!:)

Salad is always safe, if I'm stumped. Not much of a cook; I've only recently started dabbling in the kitchen.

i've always done refried beans and mexican rice but since u already got the rice....just the beans :)

Ahh...didn't see you had rice in the stuffing. Then I would say corn and a salad.

Really? I don't consider it that. Especially with the amount of beef in them.

Stovetop FTW!

DO this:

Mix stove top with chicken broth and some mixed vegies. Top with some butter and bake for 20-30min at 300 degrees and yuMMMMAY!

I'm eating now. I went with... wait for it... corn and salad on the side!:D With shredded cheddar on top. For a first attempt with no real recipe, it turned out pretty good. The pepper isn't quite done, close but a little too crispy. The rice is slightly dry too.

Despite it's problems, for some reason it takes awesome. I should have started cooking a long time ago.

Two large stuffed peppers with over a half pound of beef is a pretty decent meal.

Cook your rice al dente before adding it to your mix. In other words you want to precook(soften)
the rice a little.
