My favorite is Pesto Orza. Just mix cooked orzo with fresh Pesto and a touch of cream/butter. It's like the perfect match.

Stay light without heavy sauces that will numb the palate and overpower the salmon. A rice pilaf and asparagus with butter would be perfect.

Thirded. Thats what I went with when I cooked up some of my trout the other day.

I caught a few nice fish in a lake up here (one was 22". the other 22 1/2"), and cut a piece off of each one to grill, and the rest I smoked.
