I installed the Server 2003 eval on my desktop for sh!ts and giggles one time, but it was a PITA to turn on all of the stuff you need in order to run it as a desktop OS (turn on hardware graphics accleration, manually install DX, etc). Also, a lot of low level apps like virus scanners and CD burning apps, even the Logitech iTouch software, doesn't get along with Windows Sever. If you are feeling adventurous and have a 64-bit CPU, you could always trade up to Win XP-64 Bit (I think you still have a bit more time before the trade-up program expires).
